Classic Taco Dip

I love any and all dips. I believe there is absolutely nothing wrong with having certain dips for dinner – why save all that goodness for social events and football games?? Last week, we dined on Buffalo Chicken Dip, and last night we had our Classic Taco Dip. I try to have a variation of Mexican for dinner once a week since it’s so easy and quick, but the same old tacos and enchiladas get boring after awhile.

Enter: Taco Dip! It’s a super simple recipe that once you’ve made it a couple times, you’ll be able to whip it up by memory. You can prep it beforehand and just throw in the oven when you’re ready to eat.

After removing from the oven, try topping with:
sour cream
black olives
guacamole
shredded lettuce
corn salsa (I love Stonewall Kitchen’s Spicy Corn Relish!)

We typically serve our dip with a large bowl of tortilla chips, but there are so many possibilities! Try scooping the dip onto a tortilla for an easy taco or adding it to a bed of greens for a hearty Mexican Salad. Perfect for dinner with the family or sharing with a group.
